Food hygiene training

Food business operators must make sure that any staff who handle food are supervised and instructed, or trained, in food hygiene in a way that is appropriate for the work they do.

As a guide, those food handlers who prepare open, high-risk foods should have formal training. This takes the form of a food hygiene course which is available at a level two award in Food Safety in Catering, intermediate and advanced.

The minimum requirement is the Level 1 Food safety awareness certificate which is suitable for those handling low risk foods or carrying out general duties such as waiting or kitchen porter. You should ensure that you go on training courses that are accredited by organisations such as CIEH or  RIPHH .

It is good practice for a business to keep records of training completed by every member of staff, to demonstrate individual levels of competence.

Where to go for training

We can provide a list of local training organisations that offer food safety courses.
